SAMFAINA
La
samfaina és una fantàstica combinació, fonamentalment, de tomàquet, pebrot i
albergínia. Serveix de
salsa base o de guarnició, per a plats de peix, i bacallà, carn o menuts i ous.
Ingredients
2
cebes mitjanes
2
pebrots vermells (o uns 250 g)
1
pebrot verd (opcional)
½
kg de tomàquets madurs
2
albergínies mitjanes
2
carbassons (opcional)
4 grans d’alls
oli ( 2 dl o 1/2 got, aproximadament)
sal
Elaboració
Poseu
l’oli en una cassola al foc, afegiu-hi la ceba tallada a tires d’uns 2 a 3 cm,
aproximadament, així com els pebrots tallats a tires com la ceba, si bé una
mica més amples.
Deixeu-ho
ofegar lentament al foc; un cop una mica cuit, afegiu-hi els alls tallats fins
amb el ganivet. Quan siguin rossos afegiu-hi els tomàquets, pelats, sense
llavors i tallats a daus no massa grossos. Afegiu-hi l’albergínia, mig pelada o
pelada del tot (la pela pot amarguejar) i tallada a daus o tires. Deixeu que es
vagi confitant lentament, sense deixar de remenar; si veieu que l’aigua del
tomàquet ha desaparegut , tireu-hi una llossada d’aigua i deixeu de nou que es
vagi consumint; 10 minuts abans de retirar-ho del foc ho destapeu, si veieu que
té massa suc. No obstant, ha de quedar melós, és a dir, amb una textura
diferent del “pisto” espanyol, que és un fregit. Ho proveu de sal.

Hi
ha una variant, consistent a prescindir de al ceba, afegir-hi carbassó, o bé
fregit o bé cru. Si fos així, li afegiríem en el mateix moment en què hi posem
el tomàquet. Teniu en compte que deixa anar aigua. Algun ingredient es pot
escalivar.
