TE DE ROCA, ROOIBOS I TES PER DONAR
I PER VENDRE
L´autèntic té només és el de la Xina, que es beu també al
Tibet, al Japó, a tot Àsia, a la Gran Bretanya… Però també hi ha plantes
aromàtiques de casa nostra anomenades “te”.
El te de roca (Jasonia glutinosa) és una herba tan popular en algunes comarques de
Catalunya, que es confon amb el te pròpiament dit. Ambdues plantes, no obstant,
no tenen res a veure, llevat que s’ empren les dues per a fer infusions. És el
mateix que s’ escau amb altres plantes anomenades “te” crec que d’ una forma
abusiva, com el rooibos (Aspalathus
linearis) d’ Àfrica del Sud, ara molt de moda, que també és una espècie
diferent de l’ arbust del te (l´úniC que té cafeïna). El rooibos , dit també te
vermell (pel color de la infusió), fa que es pugui confondre amb l´autèntic te
vermell xinès (pu’er). Al rooibos, que ja es comercialitza aqui, se li atribueixen
virtuts relaxants, estomacals, contra la càries, etc.
Mentre que algunes plantes
aromàtiques, assecades no perden res i fins i tot guanyen en aroma, en el cas
del te de roca, que es fa servir normalment assecat, en fresc té encara un gust
més aromàtic, tot i que, si no som uns
bons excursionistes, sera`difícil d’ haver-ne.
Té usos medicinals populars,
especialment contra els cadarns i refredats de pit. Es una palnta considerada tònica i digestiva.La
seva relació amb la gastronomia ve del fet que amb una branqueta es fa una
excel.lent infusió estomacal i contra el mal de panxa. I, sobretot, es fa
servir per fabricar licors casolans. Forma part, per tant, de les herbes de la
ratafia o altres licors d’ herbes, com poden ser els de Mallorca, Eivissa o els
herberets, herberos, etc. valencians.
Cal destacar que pot formar part de
la ratafia. Però també s’ en poden fer licors “monogràfics”, com un
d’ excel.lent que es fa a Morella, macerant la planta en alcohol,sucre i aigua,
a la comarca dels Ports, on se n’ hi cull d’ una molt bona qualitat.
En aquestes comarques- com a d’
altres de Catalunya i d’ Aragó- hi és molt popular com a infusió, dita
normalment “te”. Algú s’ ha trobat amb la sorpresa, que en demanar un
veritable te (a l’ anglesa), per la força del costum, hom li ha servit aquest
altre beuratge. A Morella aquest te de roca, “arreglat” amb
aiguardent i sucre, és típic prendre’l durant la “rogativa” de la
Mare de Déu de Vallivana, patrona d’ aquesta monumental i preciosa ciutat. Si
la infusió es fa amb la planta fresca, pren un bonic color de llimona i, com
dèiem, és molt aromàtica. Un dels records palatals i emotius que tinc d’ aquest
aplec d’ una ciutat que estimo molt- la ciutat del flaó i d’ una cuina robusta
i exquisida- és el te de l´amistat de Morella.
El te de roca, arreu dels Països
Catalans, té també el nom de te roquer. En espanyol s’anomena te de roca o te de Aragón.
No s’ ha de confondre amb d’ altres
plantes que porten el mateix o un nom semblant, com el també anomenat, segons
la contrada, te de roca (Alchemilla
alpina); el te del país o te de muntanya (Veronica officinalis), el te de bosc (Galium vernum), te de senyors o te de soqueta (Potentilla caulescens) o el te bord o te de Mèxic (Chenopodium antelminthicum, en anglès american worm-seed), i el te bodris, te
bord o bodris , mil-en-grana, herba xinxera, herba del cuc (Chnopodium botrys).
Altrament, a Menorca, segurament
per influència anglesa, totes les aigües o infusions són anomenades tes; el te
pròpiament dit (Camellia sinensis) és
anomenat te anglès, una beguda que els britànics hi varen deixar durant el seu
domini, al segle XVIII, al mateix temps que els púdings i els noms de diversos
plats o ingredients i que , al seu torn, varen ser els protuguesos els qui el
varne portar del Japó al segle XVI (cha,
nom portuguès, mandarí i japonès).
El te de roca viu a les esquerdes
de les roques calcàries i assolellades, a vegades de difícil accés, cosa que li
dóna un prestigi sobrevingut, ja que
només es trobe en uns llocs escassos i a vegades és fins i to arriscat collir-lo.Brota
cada primavera d’un cep, te unes fulles lanceolades que floreixen de juny a agost,i són de color groc. Si es
refrega amb el dits, se sent de seguida la seva aroma, una mica camforada. Una
herba semblant, l’herba estranya (Jasonia
tuberosa),no tan apreciada, en canvi, viu a Catalunya en llocs més
fàcils.També el te bodris es troba més fàcilment, als llits assecats dels rius.
A mi l´autèntic te de roca me’l regalava un amic valencià, i era un dels
presents més apreciats.
Diem, finalment, que per extensió
la major part de les herbes tractades en els llibres d’ herbes (jo mateix n´he
publicat dos, un d’ ells exhaurit i l´atre vigent, El llibre de la ratafia. Ratafies
i licors d’ herbes de tot el món,
amb un complet diccionari de les herbes aromàtiques) són susceptibles d’
esdevenir un “te” o infusió o
bé una tisana- decocció de substàncies medicinals en aigua-, tot i que el nom
més popular per indicar tant infusions com decoccions és
“aigua”,seguida del nom de l’ herba:”aigua de farigola”. A
les Balears, bullidura. O, si voleu, te.

Tots pràcticament s’ elaboren
igual; es fa una infusió de 3 a 5 minuts en aigua a punt de bullir, si pot ser
en un recipient tapa (tetera, tassa, etc.). Es poden beure al natural o afegir-hi
sucre, mel o sacarina.
Es poden prendre després de menjar
o a qualsevol moment, no necessàriament per a fins terapèutics.
Jo a vegades al te de roca hi
afegia un raig de gin.Això sí que reconforta!

Però el que de veritat és bó per al drenatge de la vesícula són les taronges amb tota la seva fibra i la carlota crua.
En aquest cas canviar a uns hàbits gastronomics sa i natural sempre és el que més trascendental i el que més convé.
