Ahir al suplement de El Periódico parlàven d'un cuiner brasiler (no recordo el nom, el seu restaurant era el "DOM"). L'home s'havia fet un nom amb cuina de vantguarda, però ell volia fer cuina brasilera, que considera que s'està perdent front a les estrangeres. Li van aconsellar que no ho fés. Ara fa cuina "creativa" però amb productes i sabors de Brasil, com la mandioca, etc. Noto que la "nouvelle cuisine" està ja totalment desfasada, i que la "creativa", com la que fan els Roca a Girona o aquest altre senyor a Río, té interés (pels periodistes, la gent de carrer no podrem anar-hi mai, amb aquest preus) perquè fan conéixer els gustos locals, sense els quals, per moltes filigranes que facin, no tindrien l'èxit del que gaudeixen. Potser d'aquí poc els grans cuiners s'atreviran a fer cuina brasilera al Brasil o catalana a Catalunya sense por a perdre el prestigi si no fan esferificacions i escumes amb sifó.
Jo on millor menjo del món és als restaurants de menú de Barcelona i als de San Sebastián, per 12€ el menú complet amb beguda com a molt.

Personalment no he tastat mai la cuina d'avantguarda, la meva butxaca no em permet segons quines hipotètiques alegries. Tampoc no em raca, si tens l'experiència de comprar i de cuinar veus que algunes cartes del món de la restauració estan en plena sintonia amb els temps que corren: quan més grossa és l'enganyifa més adeptes té. Per horari laboral dino tard, un plat únic que tira a "platillo". Quan cuino procuro fer-ho en quantitat suficient per poder congelar un parell o tres de racions extres, la feina és la mateixa. Al vespre l'amanida, el pa amb tomàquet, la truita, el peix...Es tracta, crec, d'adaptar els plats tradicionals a les necessitats del dia a dia, reduïnt greixos per exemple. Uns "habones de Sanabria" no cal cuinar-los amb cansalada i orella, amb una micade xorís i l'os de pernil ni ha prou perquè quedin excel·lents. No se si m'explico.
A casa ja no mengem mai, o molt poc, carn per sopar. Les fabes amb pernil o cansalada, una mica per donar gust, però amb més verdura que carn; la verdura bullida amb patates de tota la vida; al suc hi afexeijo algun ós, o si ti tinc, algun trosset de pollastre, i tinc una sopa per l'endemà, les truites del que sigui amb pa amb tomàquet, etc.
Les fabes amb orella i totes les carns bones les deixem ara com a plat de diumenge al migdia.
M'ha fet molta gràcia el teu comentari. S'adapta exactament al que fem a casa. Jo que em pensava que èrem extranys...

Ep Marisa, els habones no són faves. És una mongeta que un cop cuita queda del tamany del dit gros. Es desfà a la boca com la mantega. Mira, per demà descongelo una ració.
Quina, la mongeta plana? No ho sabia... doncs fijo que si algú m'ho ha proposat per posar en una recepta, he posat fabes... oups, merci! També m'agraden molt les mongetes, als nens els les fèia en puré, amb patata bullida, després xafada amb una forquilla. Ara les mengen senceres, però de vegades el petit es xafa ell mateix la patata.
La cuina de la mandra, amb amanides i coses passades breument per la plantxa, a mi m'agrada molt si és amb bons ingredients. La cuina dels estofats i els brous, on tot s'aprofita, la fèiem d'àvies però ben presentada és fantàstica, i no sé on li veus la no naturalitat. Permet apofitar tots els sucs i nutrients, parts d'ingredients (com ossos, etc.) que altrament llençariem, cuinar am antelació i menjar calent i bo quan arribem cansats a casa... o encara més bo si ens ho fa un altre! Les àvies de la postguerra s'havien entestat a afegir mé i més greixos i coses per a enriquir-los, però ara, per a cada dia, també ens em podem fer de més simples, amb més verdures.
Francament, si he de pagar en un restaurant, prefereixo que sigui per un bon estofat que per un filet passat per la paella amb amanida verda. Això ja m'ho faig jo quan no tinc ganes de cuinar.
Cuina economica pot ser aquella capaç d'oferir la qualitat dels nutrients més saludables i les formes més adients de preparar-los a l'abast de tothom.

La consciència orgànica i biologica d'una cuïna saludable creix exponencialment als països que més han estat maltractats com Alemanya, els Estat Units i Gran Bretanya.
Encara que es pot pensar que els països nordcs amb un clima inospit i fred, han acabat sent els més 'desenvolupats' i no van encara amb taparabos, ni poden anar encara que vulgueren.

O aprofitar la crisi per anar cap a una cuina ancestral i natural de supervivència saludable i activa.
És a dir després de la cuïna del bollit i estafat passar a una cuina més fresca i natural del no bollit amb més fruïtes i amanides.
